Corrective Action(s): Pull away from wall and perform a thorough cleaning. Scrape off build-up and manage this area better. Include this area in scheduled sanitation plan.

Comments

Green cutting board needs to be soak sanitized to remove black mould-like staining.
Temperature controls good. Cooling units less than 4 C. Freezers around -18 C.
Dishwasher measured at 74 C at plate - ok.

Lots of clutter in premises, but well organized and generally clean in amongst this clutter. Keep it at this level.
Kitchen looks very clean today.

Monitor Hot Water Tank for leak and deterioration at base of unit. Recommend replacement and ensure it is approved by local authority.
