301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1. Mildew found in crevices of small white plastic cutting board.
2. Ice wands in walk-in freezere were not stored in a sanitary manner.
Corrective Action(s): 1. Small white cutting board had mildew in the crevices of the cutting surface. Crevices are due to regular wear and tear of repeated knive cuts. When it is difficult to clean and remove mildew from plastic cutting boards, they need to be resurfaced or replaced. Manager discarded the mildew-laden cutting board and replaced it with a new one at the time of inspection.
2. Ice wands stored in freezers shall be stored in a sanitary manner to keep them free of contamination. Three ice wands were found stored uncovered on top of other boxes/food items in the walk-in freezer. Manager instructed staff to clean and sanitize the three ice wands at time of inspection; and instructed staff to cover ice wands with clean single-use plastic sleeves (and to double bag as necessary due to length of wands) before storing in freezer as per White Spot policy.

Observation (CORRECTED DURING INSPECTION): Volume of quats sanitizer in bucket for in-use wiping cloths on cook line was inadequate
Corrective Action(s): An adequate volume of quats sanitizer shall be provided for sanitizer buckets to ensure in-use wiping cloths can be fully submerged when stored in the sanitizer. A fully submerged wiping cloth will ensure bacteria do not grow on cloth. Manager corrected at time of inspection and instructed staff to ensure buckets are at least half-filled with quats sanitizer.

General observations:
All coolers were 4 degrees Celsius or less.
All freezers were less than -18 degrees Celsius.
Food storage practices were good.
Organization of storage areas was satisfactory.
All hand sinks in the front and back of house were stocked with liquid soap and paper towels.
All sinks were equipped with hot and cold running water.
Staffs hygiene and food handling practices appeared satisfactory.
General sanitation was satisfactory.
Quats sanitizers (buckets for in-use wiping cloths and spray bottle) had concentrations of 200ppm.
Low temperature dishwasher had a residual chlorine sanitizer concentration of 100ppm.
Glasswashwer had a residual iodine sanitizer concentration of 12.5ppm.
Chemicals were stored in a safe manner.
No signs of pests.
