Observation (CORRECTED DURING INSPECTION): One under counter prep cooler that was storing slice cheese and cream cheese was at 8 C internally.
Corrective Action(s): Operator to store all cold perishable food in cooler at 4 C / 40 F or colder; operator moved all food from that cooler to the other cooler in good working order, service person will come in to check the cooler later today

Observation (CORRECTED DURING INSPECTION): Sanitizer (Quat) detected in buckets to store wiping rags was less than 50 ppm. Manager replaced all sanitizer solution to reach 200 ppm Quat
Corrective Action(s): Ensure that sanitizer solution is in adequate concentration (quat) at 200 ppm) to kill bacteria, virus on surfaces and on wiping rags.
Make sure to test the solution and change the sanitizer solution regularly (every 1-2 hrs)

Observation: Ice machine near dry storage area is dripping water from the pipe; operator was aware of the problem and called in repairing person, repair should be done by next Monday.

All hand washing stations were equipped with cold and hot water, soap and paper towel
Monitoring logs for temperature and sanitation were available and up to date
High temperature dishwasher final rinse temperature was measured at 74 C / 165 F or hotter
Freezers were measured at -18 C / 0 F or colder
Hot holding units were measured at 60 c or hotter
Staff were washing hands frequently and wearing proper attire
All food items were properly covered, labelled an being stored off the floor.
