Comments

-Store utensils on the cook line in ice, not in a sanitizer solution. Discussed with the head chef.

Inspection conducted with the student EHO.
Hand washing sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
Temperature records were up to date.
All glass washers (3) had 12.5- 25 ppm Iodine. The main bar's second glass washer is not regularly used and disassembled.
Kitchen dishwasher had 100 ppm chlorine. Records were up to date.
Sanitizer bottles had 200 ppm quats.
No evidence of pests, pest control report available.
General sanitation was satisfactory.
