Paper based inspection report 259302:
- Large prep cooler had an ambient temperature of 2.6C to 3C (top and bottom). Operator said technician repaired cooler and adjusted settings so defrost cycle occurs at 6 am.
- QUATS available in large bottles in storage closet. Sanitizer dispenser is being repaired. Ensure to follow manufacturer's directions to ensure 200 ppm QUATS is prepared in spray bottles at all times - Grime is removed from deep fryer wheels and floors are cleaned. Ensure to clean and disinfect floors DAILY.
