Observation (CORRECTED DURING INSPECTION): Several food items in one of the prep coolers on the sushi prep line were observed to be at elevated temperatures at time of inspection (ie. ~12-14 degrees Celsius)
Corrective Action(s): Instructed staff to discard any potentially hazardous foods that have been stored in this cooler unit overnight.
Instructed staff to transfer all remaining foods stored in this cooler to an alternate unit and discontinue use of this cooler until it can be inspected/repaired by a service technician.

- High-temp dishwasher achieved final rinse temperature of ≥71o Celsius (73.2 C)
- Facility appears clean and well-organized
- No pest activity observed during inspection
*Discussed temperature monitoring and record-keeping procedures with staff. Ensure to manually check all cooler/freezer temperatures daily to ensure all units are operating at safe storage temperatures.
*Discussed installing a door-sweep on the base of the rear door to prevent pest entry into the building
