- All handsinks are stocked & maintained
- 200ppm QUAT available in spray bottles & dishwashing area
- 50ppm chlorine residual detected in one of the sanitizer buckets (scheduled to be changed in the next 2 hours) **Change the sanitizer solution. At least 100ppm chlorine residual must be maintained.
- 100ppm chlorine residual detected in one of the sanitizer buckets (scheduled to be changed in the next 2 hours)
- Walk-in cooler measured <4C
- Walk-in freezers measured <-18C
- Hot held foods (nuggets) measured >60C
- Time control for potentially hazardous foods left at room temperature is properly followed
- The cooler by the main prep line measured 10C at the time of inspection. As per the temperature log, this unit measured <4C. This unit may be on de-frost mode or it is too packed to allow proper air flow. Move all foods in the cooler to the working walk-in cooler for now until it is confirmed that the temperature decreases to 4C (40F).
