Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -19C or colder; hot holding units above 60C; thermometers present; and temps recorded 2x daily.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle. Ensure chlorine test strips are present to text the strength daily.
- Hand washing sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Quats sanitizer in spray bottles and cloth buckets had 200ppm strength. Test strips present.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in foods with raw protein stored below and separate from RTE foods; and foods stored 6" off the floor on racks or shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy's next professional cleaning due in March 2023.
- No signs of pests.
- FoodSafe certified staff present.
- All surfaces, equipment and food containers are in good working order.

ACTION: Peel off the protective plastic on the outer surfaces of the upright freezer in the back storage area. The plastic is NOT cleanable.**
