Observation (CORRECTED DURING INSPECTION): Staff washroom not equipped with paper towels.
Corrective Action(s): Hand sinks must be equipped with paper towels. Toilet paper is not adequate for drying hands. Provide paper towels for the staff washroom. Staff instructed to provide paper towels in staff washroom at time of inspection.

Observation (CORRECTED DURING INSPECTION): Foods in walk in cooler not covered.
Corrective Action(s): Foods need to be covered to protect from contamination. At time of inspection, several pans of bacon were not covered. Cook was instructed to cover the bacon using saran wrap, tin foil or lids.

Observation: Fruit flies in servery
Corrective Action(s): Numerous fruit flies observed in the servery. Sticky traps are in use but do not appear to be effective. Seek assistance from your pest control company for more effective fly traps.

Observation (CORRECTED DURING INSPECTION): Flies attracted to spilled wine.
Corrective Action(s): The spout on the wine box needs to be wiped after each use and any wine that drips down must also be cleaned up. Flies are attracted to the wine and at time of inspection several were found around the box of wine. Staff instructed to wipe the spout and clean the area at time of inspection.

Freezers were -18 degrees Celsius or less.
Hot holding units were over 60 degrees Celsius.
Coolers and freezers equipped with thermometers.
Hand sinks in kitchen and servery equipped with thermometers.
Sinks equipped with hot and cold running water.
General sanitation is satisfactory.
High temperature dishwasher had a final rinse temperature of at least 71 degrees Celsius (as per thermal label).
