Observation: Sleeves installed over lights in the three compartment sink area. However, light cover over the cookline is still broken and a corner of one of the lights is exposed.
Corrective Action(s): Repair/replace light cover or install sleeves to prevent potential contamination of food in case the bulb breaks.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Noted some fish in sink thawing in cold standing water at approx 10C. Staff member turned on cold running water at time of inspection.
Corrective Action(s): Ensure cold perishable foods are thawed at 4C or less (under cold running water or in the cooler unit.

Observation: Noted fruit flies in the back storage area and by sacks of potatoes.
Corrective Action(s): Do a thorough cleaning in this area, reduce moisture and increase frequency of pest control service. Fax a copy of the two most recent pest control reports to the undersigned for review.

Observation: Garbage bag noted behind pop dispenser machine.
Corrective Action(s): Do not use garbage bag to cover food equipment. Only use food grade bags/equipment.

Comments

Hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers 4C or less (2 upright sliding 2 door cooler units)
Creamers stored on ice pack
Ensure batter in containers are turned over every two hours if not maintained at 4C or less. Discard after two hours.
Containers for batter should be washed and sanitized between uses and not refilled after a batch is used up.
Walk in freezer -21C
All hot holding higher than 60C.
Ice wand available on site.
General sanitation satisfactory for busy time of operation.
Back door was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Cloths stored in large container with 100ppm chlorine sanitizer solution..
High temperature dish washer achieved 71C (with thermolabel).
Foods were stored off the ground and covered.
