Observation: Though handsink was available for staff to use, it was observed that staff were washing dishware in the FOH handsink then taking it to the back of house to run through the dishwasher.
Corrective Action(s): FOH handsink to be only used for handwashing and as a dump sink. DO NOT wash dishware in this sink.
Moved sponge and dish soap that was at the handsink to back of house

=soup hot holding only during the winter (not in operation at the time of inspection)
=High temperature dishwasher had a final rinse temperature of 73.9 C at the dish surface (minimum 71 C required for proper sanitizing)
=Wiping cloths stored in bleach sanitizer solution approximately 100 ppm chlorine
=No evidence of pest activity at the time of inspection, though some minor rodent droppings observed under the dry storage shelf in the back of house. clean area and sanitize
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered.
