Handsinks equipped with hot/cold running water, liquid soap, and paper towels
All temperatures satisfactory:
-Walk in cooler at 2.3 deg C
-Walk in freezer (inside walk in cooler) at -22 deg C
-Prep cooler drawers on right side (facing cooking line) at 2.3 deg C
-Prep cooler drawers on left side at 4 deg C
-inserts vary from 4-6 deg C, inserts are not filled to top and staff indicate they are used within 2 hours
-Hot holding sauces/soups at >60 deg C (rice was at 66 deg C)
-Temperature logs maintained up to date for coolers, temp logs also maintained for cooling process of hot foods
-Foods in coolers are covered
Chemical dishwasher (kitchen dishwasher) achieved 50 ppm chlorine residual on rinse cycle at dish level, wash temperature was 61.4 deg C
Bar glasswasher achieved 50 ppm chlorine residual on rinse cycle
Ice scoop stored outside of ice box
General sanitation is good; continue regular cleaning underneath cooking line and along back wall
No signs of pests at time of inspection
