Observation (CORRECTED DURING INSPECTION): Large container of cooked rice noodles observed stored at room temperature in kitchen. Noodles were observed stored in water which measured at internal temperature of 15'C. Staff moved the rice noodles to the cooler during inspection.
Corrective Action(s): Do not store any potentially hazardous food at room temperature. Store all potentially hazardous foods in the cooler at or below 4'C at all times. All foods left out at room temperature for more than 2 hours must be discarded.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Two knives in kitchen observed stored between sandwich coolers and walls with food debris on the blades. Two mandalines observed stored in equipment storage area with food debris on the blades. Staff placed the knives and mandalines in the dishwashing area to be cleaned and sanitized during inspection.
Corrective Action(s): Clean and sanitize all equipment after each use using the 2-compartment sink dishwashing method or the low-temperature chemical dishwasher. Do not store any dirty utensils, especially in areas which are not intended for storage (e.g. between pieces of equipment).

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration with test strip. Staff replaced the sanitizer stock bottle and repaired the dishwasher which later measured at 50 ppm chlorine concentration at plate surface with the test strip.
Corrective Action(s): Ensure the dishwasher is able to maintain a sanitizer concentration of 50-100 ppm chlorine at the plate surface for adequate sanitation of all equipment, dishes and utensils. Monitor and verifiy dishwasher sanitizer strength with available chlorine test strips on site.

Observation (CORRECTED DURING INSPECTION):
1. Two containers of raw meat observed stored on shelf above cooked foods in the 2-door glass cooler in the storage area. Staff moved the containers of raw meat to the bottom shelf during inspection.

2. Half-cooked chicken observed stored directly in one of two compartments of the 2-compartment sink. Staff moved the chicken to the preparation sink during inspection.
Corrective Action(s):
1. All raw meat must be stored on bottom shelves of containers and away from all ready-to-eat foods to prevent contamination.

2. The 2-compartment sink IS NOT approved for food preparation and is to only be used for manual warewashing. Use the preparation sink on site in the kitchen for all food preparation.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1. General sanitation of premise is unsatisfactory, observed with food debris and/or grease build up in the following areas:
- All cooler doors and handles
- Insides of all preparation coolers (inserts and bottom shelvings)
- All floors, especially in hard to reach areas including but not limited to dry storage area, kitchen behind and around all cooking equipment, and behind all coolers and freezers.

2. Ventilation canopy is observed with heavy grease debris build-up. Ventilation canopy is due for service on July 21, 2023.
Corrective Action(s): Degrease, clean and sanitize all aforementioned areas to remove grease and food debris build-up. Conduct regular deep cleaning of all floors, walls and equipment (as per approved sanitation plan). Maintain the premise in a sanitary manner to prevent pest entry/harbouring/breeding and to promote adequate food safety practices.

Observation: Ceiling light cover observed missing in the kitchen (X1) and in the dry storage area (X1).
Corrective Action(s): Install new light covers in the kitchen and in the dry storage area to ensure the glass lights are covered, easy to clean and to prevent potential physical contamination of food.

Routine Inspection Conducted

Observations:
- All coolers at or below 4'C
- All freezers at or below -18'C
- Hot-held rice in cooker measured above 60'C
- Rice scoop observed stored in ice water - good!
- All hand washing stations are adequately supplied with hot and cold running water, liquid soap and paper towel
- Bleach sanitizer in pails (X2) measured at 200 ppm chlorine concentration with test strip
- Chlorine test strips are available on site
- Ice machine observed in good sanitary condition with scoop placed outside the machine
- All food observed stored at least 6 inches off the floor
- No signs of pests during inspection
- Professional pest control company contracted to complete monthly inspections
- FOODSAFE Level 1 trained staff available on site
