Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution concentration again well over 200ppm. This is a recurring issue.
Corrective Action(s): Ensure bleach sanitizer solution is prepared to 100ppm by diluting 1oz of regular unscented bleach to 1 gallon of water.

Observation: Ambient air temperature of small walk in cooler at ~9 degrees C.
Corrective Action(s): Service technician called and to be onsite to service the small walk in cooler today. Ensure unit is capable of maintaining 4 degrees C or less at all times. Do not store any cold potentially hazardous foods until serviced. Paneer and raw eggs relocated to front area sliding glass door cooler.

Sliding glass door cooler at 3 degrees C.
Preparation cooler inserts and lower section at or below 4 degrees C.
After correction bleach sanitizer solution available for use. Reminder to label the spray bottle identifying contents.
Operator has FOODSAFE level 1 equivalent training.
