Comments

1) Kitchen area: Sanitizing --> Dishwasher (high temp) sanitizes with a final rinse plate temperature of 74C. --> Bleach sanitizer available on-site at 200 ppm. 2) Temperatures: - Prep / stand-up coolers at 4C or below - Freezer at -15C - Cooling wells contained sources at 4C 3) Organization: Premise is in good sanitary condition. - Kitchen area is well-organized and free of clutter - Cutting boards and knives are routinely washed and sanitized in dishwasher - Raw foods and fish are stored beneath cooked and ready-to-eat items. 4) Hygiene: - Handsink equipped with liquid soap, paper towels, and hot/cold running water - Customer restrooms are sanitary and handsinks are equipped as described above. Other comments: - Dry storage area is well-lit and organized - contains soda bottles and canned tomato sauce - No visible signs of pest activity at time of inspection - Tomato sauce cooling at 33C at time of inspection - good! Sauce will be placed in cooler shortly. Recommendations: - Ventilation slats have small amount of great deposit. Consider replacing old ventilation slats on the left panel with new ones to facilitate cleaning. - Freezer light has burnt out --> consider replacing bulb. - Rubber spatulas are near end-of-life cycle with signs of minor cracking. Consider replacing the spatulas with new ones. - Fan cover in stand-up cooler is broken and will be replaced shortly by operator.
