Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitizer concentration ~50ppm.
Corrective Action(s): Ensure a 100ppm bleach sanitizer solution is available for use at all times. Store all wiping cloths in this solution when not in use. Change solution as needed.

Routine inspection:

Main kitchen hand sink provided with liquid soap and paper towels.
Front sushi preparation area and service area hand sink provided with liquid soap and paper towels.
High temperature dishwasher registers 73 degrees C at the plate surface during the final rinse cycle.
Back door to premise kept closed. Reminder in the summer time to leave back door open a secure screen door must be in place to prevent potential pest entry.
2 door cooler at or below 4 degrees C.
Both freezers at - 15 to -17 degrees C.
Display cooler not in use.
Sliding glass door cooler at 3 degrees C.
Under the counter cooler at 4 degrees C.
Back area upright freezer at -18 degrees C. Domestic cooler at or below 4 degrees C. Freezer section at -16 degrees C.
Hot holding at or above 60 degrees C.
