Note: kitchen not in operation at time of inspection. The following items were not checked:
- dishwasher. Please ensure the soap is dispensing, and the rinse cycle (the later part of the wash) reaches 180-195F on the provided gage.
- standing freezer. Locked. Check that this machine is -18C or below
- all cupboards. Unknown cleanliness. These must be cleaned and organized on a regular basis to remove old/ unused/ broken equipment, and cleaned out.
Standing coolers both measured at 4C. Remember that the temperature will increase with use (doors opening and closing), so should be running slightly cooler when not in use.
Bleach is on site and available for use. Mix 1Tbs for every 1 gallon of water to mix a proper sanitizing solution for dishes.
Note: vinegar is not an adequate sanitizer
Please store food products such as oil away from chemicals
General sanitation good. Pest control company doing monthly visits - no activity found since spring.
Consider amending existing doors or door sweeps to prevent future rodent entry.
