Observation: Small number of rodent droppings observed along the wall next to the back screen door, and along area underneath the gas canisters.
Corrective Action(s): Remove rodent droppings with 1 part bleach, 9 parts water solution. Keep back door closed at all times, and seal up the gap at the bottom fo the screen door. Continue to work with your professional pest control company to monitor for rodent activity.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Prep table in middle of kitchen area is showing signs of further decay.
2. Shelving at back-of-house, as well as inside the walk-in cooler, need to be repainted and/or fitted with an impervious material.
3. Newsprint observed being used as a 'liner' for shelving next to the chest freezer, as well as the top drawer underneath the prep table.
Corrective Action(s): 1. The prep table must be replaced or fitted with a material that is smooth and impervious to moisture (e.g. stainless steel).
2. Shelving underneath the prep table in centre of kitchen needs to be fully covered with a suitable shelf liner.
3. Discard the newsprint. You must use a liner that is smooth and impervious to moisture.

Comments

Routine inspection conducted. The following observations were made at time of inspection:

1. Temperatures
- Walk-in cooler at 3C
- Prep cooler at 3C. *Ensure that you keep the lid closed when not in use*
- Beverage cooler at 4C
- Hot-holding unit maintains 60C
- Temperature logs are generally well maintained and up-to-date. However, logs were neglected yesterday. Immediately resume temperature logs

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water, liquid soap, and single-use paper towels
- Bleach sanitizer present at 200 ppm
- 3-compartment sink equipped to wash, rinse, and sanitize utensils
- Meat slicer in good sanitary condition - it is currently not being used
- Can opener present, but rusted. Remove the can opener from premise if you are not using it. Operator has opted to use a portable variant

3. Storage
- Food products stored at least 6" off the floor
- Products are generally covered when not in use with containers with tight-fitting lids

4. Pest Control
- Pest control company arrives on a monthly basis
- Generally, area is well organized. Further attention will need to be given to sweeping underneath the shelving units

5. Administrative
- Operator has FoodSafe 1
