Observation: High temperature dishwasher in the bar area was unable to reach the sanitizing temperature of 71°C during the rinse cycle. After 5 cycles, the temperature ranged from 64-68°C.
Corrective Action(s): Service the high temperature dishwasher so it can reliably reach at least 71°C during the rinse cycle each time the dishwasher is used. Until the this dishwasher has been serviced, use the main kitchen dishwasher to wash all equipment and utensils. Correct as soon as possible. Contact health inspector for a reinspection when service is complete.

Observation: Low temperature is unable to dispense 50-100 ppm chlorine sanitizer. High temperature dishwasher is unable to reach the sanitizing temperature of 71C during the rinse cycle due to inadequate hot water supply.
Correction: Service low temperature dishwasher so it is able to dispense 50-100 ppm chlorine sanitizer. Ensure high temperature dishwasher is able to reach sanitizing temperature of 71C during the rinse cycle after hot water supply is restored.

Follow-up to inspection conducted on June 8, 2023

- Hot water supply has been restored
- Low temperature dishwasher in the kitchen has been serviced. 50 ppm chlorine residual detected. Wash and sanitize all equipment/utensils in this dishwasher prior to use.
- Continue to maintain dishwasher logs. Obtain a waterproof thermometer with min/max function to test the high temperature bar dishwasher.

*Closure order is rescinded. Restaurant is permitted to reopen and operate normally.
