Hot and cold running water available at all sinks
All coolers at 4 C or lower (walk-in cooler organization is good); all freezers at -18 C or lower; no hot holding units on site.
QUAT sanitizer on site and in use; detected 200 ppm of QUAT from spray bottle.
Three compartment sink is used for manual dishwashing; detected 200 ppm of QUAT in the sanitizing sink; air drying also noted at the time of inspection
**Noted three pizza cutting knives at counter. When asked about cleaning of the cutters, operator stated that they are cleaned every 2 hours**
***Pizza prep station had slight topping residues from the cooler when preparing for pizza. operator stated that they are cleaned every night. If extensive residue, clean immediately.**
