Observation (CORRECTED DURING INSPECTION):
The spray sanitizer bottle had [Cl2] of 0ppm. The [Cl2] shall be 100ppm at all times. A new solution shall be made every morning and old solution discarded as the strength decreases after a day.
Corrective Action(s):
Discard the sanitizer solution and replenish with a fresh solution so that the [Cl2] is 100ppm.
During the inspection, the staff completed this and corrected the concern.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers were -10C or colder; hot holding units were above 60C; thermometers present; and temperatures recorded daily.
- High temperature dishwasher had rinse cycle temperature of 75C at the plate's surface, as per max/min thermometer.
- Quats sanitizer solution in cloth buckets was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Food storage practices done correctly. All foods stored in food grade containers; covered; labeled; date coded; 6" off the floor on shelves or platforms; in groups to prevent cross contamination; and raw proteins are separated from RTE foods.
- Food handling practices done correctly. Utensils used and frequent hand washing done.
- No expired foods in use. FIFO rules are being followed.
- Improvement seen in sanitation level. Premises is clean and organized.
- FoodSafe certified staff present during inspection.
- No signs of pests.
- All equipment and surfaces in working order. Repairs have been completed to the wall by the drive-thru window.
