Observation: Inside walk in cooler, cooked ribs observed stored in a cardboard box.
Food items observed uncovered and stored both on the floor and shelving inside the walk in cooler. Many food containers observed not dated.
Corrective Action(s): Cardboard box cannot be used for food storage. Relocate ribs to a proper container.
Raise food items up off the floor and always keep covered.

Observation: Top side of Dishwasher observed with debris build up

Ceiling return vent adjacent to exhaust canopy observed with dust build up
Although blade of meat slicer was observed to be free on any debris, the guard adjacent to the blade was observed with food debris build up
Shelving in dry food storage room observed with food debris build up
Corrective Action(s): Clean top side of dishwasher
Clean floor under sandwich prep coolers
Clean grease diffusers
Clean underside of salamander unit
Underside of shelving above all food preparation surfaces are to be cleaned daily.
Clean ceiling return vent.
Clean slicer and ensure staff have been properly trained on how to properly clean and sanitize all of its components.

Observation: Servicing decal on exhaust canopy show it is overdue for cleaning
Screw observed missing on top side of access door to ice machine. As a result the door does not close properly
Several cracked lids to containers observed inside the walk in cooler
Chlorine test strips have expired. This was outlined in report on May 30.
Corrective Action(s): Have exhaust canopy serviced
Replace missing screw
Discard cracked lids.
Replace chlorine test strips

Dishwasher at 71c (At plate level). Soap dispensed into wash cycle.
Glasswasher at 148F. Soap dispensed into wash tank. Final rinse at approx. 100ppm chlorine.
All cold holding equipment cold holding at <4c
Hot holding at >60c
