Kitchen: General sanitation - good. 2 compartment sink has liquid soap, paper towels, hot/cold running water. Low temperature dishwasher at 50 ppm of chlorine residual. Bleach sanitizer in rag bucket by dish pit area at 100 ppm chlorine residual. Walk in cooler: 3.7C. Prep. cooler across stove at 3.6C (inserts half filled). Food storage well organized, covered, and off the floor. Fan hood - clean. Chest freezers (kitchen and back storage area) - satisfactory. Bar: Bar handsink - satisfactory. Alcohol walk in cooler at 3.8 C. Glass-washer at 12.5 ppm iodine residual.
