Upright cooler was at 6 deg C initially, but foods inside were probed to be at 3 deg C and chef explained that the lunch rush just finished.

General sanitation satisfactory; ensure to continually sweep up dry food debris behind the cooking line
No signs of pests during inspection
High temperature dishwasher achieved 76.8 deg C on rinse cycle at plate level
Quat sanitizer in spray bottle was at 200 ppm Quats
Temperature logs maintained up to date: **Ensure to record the temperature for your Prep cooler as well. Currently, you record temperatures for your walk in cooler and your upright cooler but not your prep cooler.
