Corrective Action(s): All glasses are to be washed/sanitized in the back kitchen high temperature dishwasher until the low temperature dishwasher is serviced and can sanitize dishes.

- All coolers measure 4C and below
- All freezers measure -18C and below
- Temperatures are checked and logged daily.
- QUAT sanitizer measure 200ppm in all the spray bottles checked
- High temperature dishwasher final rinse measure 71C and above
- Manager has valid FOODSAFE certificate
- General sanitation is good, no signs of pests

Note:
- Please be care not to over stack the insert level of the prep cooler.
>>> Store extras in the bottom compartment of the cooler
- Please ensure staff follow proper safety protocols when cleaning the slicer.
- Back two compartment sink beside the dishwasher observed filled with clutter.
>>> Please declutter two compartment sinks and ensure it is used as intended (soaking/rinsing dirty dishes).
