302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Wiping cloth for steaming wand is left on the espresso machine and reused without sanitizer. Bleach sanitizer in clear container was measured to be 50ppm. All staffs were new and were unaware of test strips until demonstrated to them onsite. Staffs were also unaware of procedure to store wiping clothes in sanitizer.
Corrective Action(s): Please ensure that wiping clothes are submerged in an approved sanitizer solution such as 100ppm bleach sanitizer between uses. Use the test strips provided onsite to verify. Review this with all staffs.

Observation: Health Permit is not posted in the food service establishment.
Corrective Action(s): Please display the Health Permit in a conspicuous location. If the permit is lost, please contact the undersign to replace the permit for a $30 fee.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Lots of paper products and food debris collected underneath the coffee bar. Small pooling of water noted in front of ice machine/handsink. Staff mentioned it was from spray water splash when cleaning the dishwashing sinks. Lots of crumbs on the ledge of cooler in the back.
Corrective Action(s): Directed staff to mop the floor. Spills and pooling water should be cleaned asap. Flooring needs to be deep cleaned, remove all food debris including noted fridge by this Friday Nov 2, 2018.

Observation: Door handle for the sandwich display cooler is missing (left).
Corrective Action(s): Please replace the door handle.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Display cooler thermometer is not working as it did not change temperature although the display case did change temperature, as compared to inspector's thermometer. Temperature records are also not up to date. Staff mentioned they are unsure where extra templates are available and thus are not checking temperatures.
Corrective Action(s): Please replace the thermometer for the cooler. Train staffs and make templates available so they know they must be checking temperatures daily. Review corrective actions to take if temperatures are wrong.

Dishwasher (high temp): 71.4C at plate; unit should be regularly serviced as it takes a few attempts to reach the temperature and the caffe has opened since morning (noon at time of inspection)
Quats sanitizer in spray bottles: 200ppm
*clean nozzle (bottom) as the rim is black
Ice machine is kept in sanitary condition, scoop is stored outside
Dipper well operational
No apparent signs of pest noted at time of inspection
One staff is Foodsafe certified, info obtained onsite

*Freezer no longer in use, it is relocated from back to front by sandwich display cooler. Staff mentioned that owner plans to remove the undercounter cooler by ice machine. Do not make structural changes including equipment addition or removal without Health Approval
**Please label food products to be discarded as they are stored in the fridge in the back.
