Observation (CORRECTED DURING INSPECTION): Bowl of sliced cooked beef stored at room temperature for lunch special. Product had been left out for >2 hours.
Corrective Action(s): Discarded. Ensure that all hot potentially hazardous foods are stored >60 degrees C at all times.

Observation (CORRECTED DURING INSPECTION): Low temperature mechancial dishwasher's rinse bottle and sanitizer bottle connected to wrong chemicals (switched). Sanitizer measured <10 ppm chlorine at the dish surface.
Corrective Action(s): Bottles switched.
All dishware to be rewashed.
Ensure that sanitizer concentration is measured daily and equipment is set up properly.

=Low temperature dishwasher measured >50 ppm chlorine at the plate surface after correcting above noted violation

=grease build up noted on door handles and steamer. clean these areas and pay particular attention to hard to reach areas.
