Observation: The cooler in the main prep line broke yesterday (July 22) and had been scheduled to be repaired tomorrow (July 24). At the time of inspection, pancakes, butter & cream cheese were stored in the cooler. They have shelf-life of 2 hours per the company policy.
Corrective Action(s): Do not use the cooler until it is repaired and is able to maintain 4C or below.

- Handsinks are stocked
- 100ppm chlorine residual detected in sanitizer buckets
- 200ppm QUAT residual detected in 3 compartment sink
- Time stamp was not in place for the new shift. At the time of inspection, staff worked on putting time stamps. **Ensure that time control (time stamps) is properly maintained during shift transitions
- Temperatures of coolers in the front area, walk-in cooler & walk-in freezer were adequate (<4C coolers, <-18C freezer)
- General sanitation is good
- Backdoors is kept closed to prevent pest entry
- Dry storage is maintained
- Ice machines are maintained in a sanitary manner
- Hot holding foods measured >60C
