Observation: Cardboard is being used to line the cooler shelves. Also, cooked cones are cooled, covered in plastic and then stored inside a used cardboard box. This is NOT sanitary.
Corrective Action(s): Remove the cardboard from the shelves. If shelves are rusty, clean and re-paint them. Use a clean plastic container/tub to store the cones. Do not use cardboard boxes for this purpose.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler closest to hotholding unit is at 10 degC. Move all the foods into the cooler next to it.
Corrective Action(s): Do not use this cooler to store PHF's. Get it fixed. It must be able to maintain a temperature of 4 degC or below.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): There are 2 identical bottles with cleaning chemicals in it. One has 200ppm bleach/water in it and the other one has window cleaner in it.
Corrective Action(s): Label all chemical bottles as discussed! Use only bleach/water solution to clean countertops and food prep areas.

-Cones are shaved off and the shaved meat cooked further on the grill prior to being placed in the hotholding unit (secondary cook step is in place).
-Hand sinks are fully equipped
-200ppm bleach solution is on-site
