Observation: 1. Few rodent droppings observed in underneath stairwell where chemicals are stored.
- Few droppings located in very corner underneath shelving in dry storage area
2. Gap observed underneath back door (weather stripping required)
Corrective Action(s): 1. Remove all droppings and sanitize affected areas, employ appropriate control measures
2. Ensure that weather stripping is installed so prevent any entry points for rodents.

Routine inspection conducted.

- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels
- All temperatures meet health requirements:
* Walk in cooler at 4C
* Walk in freezer at -15C
* Line coolers/ prep coolers at <4C
* Hot holding units maintaining food temperatures at 60C or above - except one chorizo sauce, corrected during time of inspection (reheated)
- Temperature logs kept and maintained
- Probe thermometer and IR gun available for monitoring temperatures
- QUAT sanitizer available in buckets throughout facility, concentration at 200ppm concentration
- Dipper wells in use during time of inspection
- Ice machine maintained in sanitary condition during time of inspection
- Commercial fume hood/ canopy maintained in sanitary condition.
- High temperature dishwasher available, adequate sanitization temperature reached via hot water after first cycle (78.4C)
- Pest Control Operator reports reviewed during time of inspection - no new activity detected inside premises for last year as per report
- Good employee hygiene exhibited during time of inspection
- Foodsafe certification updated for operator/ manager and kitchen staff - GREAT (expiry 2023)
- General sanitation of facility - OK
