Observation (CORRECTED DURING INSPECTION): Hand sinks in the sushi bar and cooking areas had bowls in the hand sink basins.
Corrective Action(s): Do not store any items that blocks the use of the hand wash sinks. Remove immediately so that they are easily accessible.

Hand wash stations equipped with liquid soap and paper towels.
Quats sanitizer (in spray bottles used for dining tables) measured 200 ppm.
Bleach sanitizer (in bucket used for kitchen area) measured >100 ppm.
Sushi area: display cooler and prep line coolers were at 1-3 deg C; small deep freezer was at -25 to -30 deg C.
All other coolers in the kitchen area was at 3-4 deg C.
All other freezers in the kitchen area was at -18 to -23 deg C.
Hot holding for rice and miso soup was at 65-72 deg C.
High temp. dishwasher measured 73 deg C at plate surface.
All food items were stored off the floor.
Dry storage area was organized.
Counter tops and shelves were clean.
General sanitation was satisfactory at time of inspection.
