Observation (CORRECTED DURING INSPECTION): Cold noodle broth contained mould.
Corrective Action(s): The cold noodle broth was discarded at time of inspection. Ensure that all food items are covered at all times to prevent foods from contamination.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Cold noodle broth was uncovered in the walk-in cooler at time of inspection and contained growth of mould. Other buckets filled with soups and kimchi were not fully covered - ladle handles prevented the lid from fully closing.
Corrective Action(s): The cold noodle broth was discarded at time of inspection. Ladles were taken out of the other buckets and stored outside of the containers. Ensure that all items are covered when not in use to protect against contamination (e.g. from pest activity, mould).

Observation (CORRECTED DURING INSPECTION): Area behind grease interceptor still contains a significant amount of grease and food debris.
Corrective Action(s): The food debris was swept away and the surrounding area was adequately cleaned.

Follow-up inspection to previous follow-up conducted March 20, 2018 (RPT#AX2TZA). Closure order has been rescinded at time of inspection.

Previous deficiencies stated in order that have been addressed:
- Rodent droppings observed in previous report have been removed in accordance with the Environmental Health Officer's instructions (1:10 dilution of household bleach). Note: Some rodent droppings were cyan/blue-coloured. This likely indicates that the droppings contain exterior bait (i.e. poison). If you observe rodent / coloured droppings on food contact surfaces, do not serve food to the public and contact your Environmental Health Officer and pest control company
- All dishes have been cleaned and sanitized through the dishwasher and are now stored securely. Stone bowls and grills were located in pest-proof rubber containers. Rubber lids were not obtained yet for the stone bowls - as a temporary measure, seran / plastic wrap was being used to cover them. Please obtain rubber lids by the end of today
- General sanitation has significantly improved - areas under walk-in cooler, stand-up cooler now in sanitary condition
- Operator was instructed to obtain a flashlight to monitor for droppings and rodent activity (e.g. gnaw marks on wiring, dry storage goods being chewed)
- Professional pest control company has been contacted and will follow-up with operator to assess potential entranceways for pests and rodents, and measures to block off such entranceways

Please follow-up with company who manages grease interceptor to determine the following:
1) If the grease interceptor is leaking (grease stains observed adjacent to interceptor)
2) Discuss ways to reduce odor from the interceptor

Follow-up inspections will be conducted to ensure that an appropriate integrated pest management (IPM) program is being maintained, including sanitation, monitoring for rodent activity through mechanical traps, droppings, and physical characteristics such as gnaw marks. Keeping the facility pest-free is a collaborative effort between you, the professional pest control company, and the district Environmental Health Officer.
