The following items have been corrected: - the low temp dishwasher is supplied with min 50ppm chlorine residual - wiping clothes have been stored in approved sanitizer ( bleach at 100ppm ) - owner's food safe certification has been expired in January 2019( she is scheduled to take on line recertification ) Thank you for your attention. NOTE: please measure the daily chlorine residual at the final rinse and also at the chlorine solution.
