Observation: No thermometer observed in the upright freezers in the back area
Corrective Action = Place an accurate and working thermometer in the upright freezer
Rationale = A working and accurate thermometer must be available in all refrigeration units to ensure that potentially hazardous foods are properly being stored at the correct temperature

Observation: In operator's absence no staff onsite was able to present valid and current FOODSAFE Level 1 or equivalent certificate
Corrective action = Ensure that at least one staff onsite has valid and current FOODSAFE Level 1 or equivalent training
Rationale = At least one staff oniste must have current and valid FOODSAFE Level 1 or equivalent training so that the staff is knowledgeable and informed of the current food safety practices in order to prevent the incidence of foodborne illness

General observations noted during the inspection
1. Temperatures
- Prep cooler measured to be 2.4 C (top) and 4.0 C (bottom)
- Walk-in cooler measured to be at 24 C
- Beverage cooler measured to be at 4.0 C
- Upright freezer measured to be at -18 C
- Thermometers visible in refrigeration units (except see code 315)
- Temperature logs in use and recorded daily

2. Sanitation
- Dough mixer and slapping machine cleared and sanitized at the end of the day
- Three compartment sink with sink plugs for manual warewashing
set up. QUATS sanitizer compartment measure at 200 ppm
- QUATS spray bottle and dispenser line measured to have 200 ppm QUATS
- Vegetable slicer observed to be cleaned during inspection
- Tong and knife for portioning pizza cleaned and sanitized after use
- Handsink equipped with hot/cold running water, liquid soap and paper towel for both the kitchen and washroom areas

NOTE= Paper towel dispenser in the washroom not observed to be dispensing paper towel due to malfunctioning battery. Supervisor indicated that technician will be onsite tomorrow to fix unit
3. Food Storage
- All foods observed to be stored off the floor and covered
- No raw meats stored above ready to eat foods
- Food in inserts marked with a use-by date
- Shatterproof light cover observed in the walk-in cooler

4. Pest Control
- No pest activity detected during time o f inspection
- Professional pest company services the company on a routine basis

5. Administrative
- Permit posted in location that is visible to customers
