Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer -18C; hot holding units 60C or hotter; thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] above 200ppm.
- No expired foods in use or for sale. FIFO rules followed.
- Foods stored in food grade containers; covered; in groups with raw proteins separate and below RTE foods; and 6" off the floor on shelves or platforms.
- General sanitation level is adequate. Ensure the exterior surfaces of food containers are routinely cleaned and plastic shelf covers are changed at least weekly.
- No signs of pests.
- Food handler washes hand frequently, and upon completion of a task or when changing tasks.
- FoodSafe certified staff present. Discussed with owner that his certificate will expire in July 2018 and a refresher course is required to be completed. Go to www.foodsafe.ca for available refresher course.
- 3-comp sink used to wash and sanitize dishes.
- Receives fresh chicken thighs 3 times a week. Chicken is marinated and stored in the fridge prior to cooking on the donair machine. Beef and lamb cones received weekly and stored in the freezer until cooked on the donair machine.
- Facility could use a bit of de-cluttering of broken or unused equipment, and/or items that should be stored at home.
