Observation: Interior of ice machine had accumulation of biofilm/mould/slime.
Corrective Action(s): Empty ice bin, then disassemble all parts of the ice machine for cleaning and sanitizing. Ensure to thoroughly scrub all parts.
Clean and sanitize the ice machine more frequently.

Observation: No staff onsite had FoodSafe level 1 or equivalent.
Corrective Action(s): As previously noted, during all hours of operation, there must be at least one employee onsite with FoodSafe level 1 or equivalent. Schedule staff accordingly or have more staff register for and complete the course.

Comments

- Hand washing stations were properly supplied with hot/cold running water, liquid soap, and paper towels.
- High-temperature dishwasher reached above 71C at the dish surface during rinse cycle.
- Bleach sanitizer solution available at 200 ppm in spray bottle. *Ensure to clearly label the bottle if reusing another product's bottle.
- Coolers were measured at 4C or colder.
- Freezer temperatures satisfactory.
- Two-compartment sink maintained in sanitary conditions
- Ice machine requires cleaning and sanitizing. See violation code 301 above. **Increase frequency of cleaning if needed - all parts (including but not limited to the condenser panel, drip tray, piping, ice cube mold/grid, etc.) of the ice machine must be thoroughly washed and scrubbed, and sanitized with your food-contact surface sanitizer.
