- Hot holding unit for soup is working properly. Soup temperature measured to be greater than 60C.
- Chef measures temperature before soup leaves kitchen and cafe staff measures temperature again when soup arrives.
- Ensure water level in the hot holding unit is adequate at all times to maintain soup at 60C or greater.
