Observation: Both ice machines had build up of mold/mildew along the crevices of the chamber and the water tray.
Corrective Action(s): Stop the use of the ice-machine until it is cleaned. Dump the ice and thoroughly clean and sanitize both of the ice-machines. Maintain a regular log to track routine cleaning/sanitation of the ice machine including the water tray. Date to be corrected by: July 22, 2021

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Scoops and knives were stored in water at room temperature at the cook line. Staff informed that the container normally has ice but it had melted.
Corrective Action(s): Ice was added to the container at the time of inspection. Ensure scoops/frequently used utensils are kept at 4C or below or at 60C or above to prevent the growth of pathogens and/or accumulation of toxins.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: A build up of food debris was noted in the corners of the walk-in cooler. The stainles steel shelves also had food debris hanging from the underside of the shelves.
Corrective Action(s): Thoroughly clean and sanitize the walk-in cooler to maintain sanitation. The shelves should be kept clean to prevent contamination of food. Date to be corrected by: August 3, 2021

Routine inspection conducted.

Temperatures:
- Walk-in cooler was at 1C.
- Walk-in freezer was at -21C.
- Drinks walk-in coolers were at 4C or below.
- Line coolers ranged from 1C to 4C.
- Under counter cooler was at 3C.
- Counter top cooler was at 4C.
- Bar cooler was at 2C (dairy).
- Hot holding was at 60C or above.

Thermometers are available.

Sanitation:
- Hand washing sinks were adequately equipped with hot and cold running water, liquid soap, and disposable paper towels.
- High temperature dishwasher had a final rinse temperature of 88C.
- QUATS sanitizer dispenser was at 200 ppm.
- QUATS sanitizer spray bottles and pails were at 200 ppm.
NOTE: Ensure wiping cloths are kept soaked in sanitizer pails or put in laundry after each use.
- Bar glasswasher had a final rinse concentration of 12.5 ppm iodine.
- Washrooms in satisfactory sanitary condition.
- Soda dispenser gun was in good sanitary condition. Ensure the nozzle is cleaned routinely.

Storage:
- General food storage practices good at the time of inspection.
- Foods stored off the floor and covered.
- Raw meats stored separately from ready-to-eat foods. Eggs stored on bottom shelves.
- Stainless steel racks are used.
- Randomly selected items were within their best before dates in the dry storage area.

Pest Control:
- Facility is monitored by a professional pest control company. They visit monthly.
- No signs of pests noted at the time of inspection.
- Tin cats were empty.

Administration:
- FOODSAFE Level 1 valid until April 3, 2024.
- Temperature logs are maintained.

Upstairs bar was not open yet due to COVID-19.
