- cooling units less than 4 C. Make sure to keep lids on prep cooler closed while not in use to ensure products in inserts stay less than 4 C.
- Sanitizer (quats) in good use. 200 ppm at source and same in spray bottle.
- general sanitation very good and premises well organized.

Customer complaint received at store regarding ants in pizza. Carry out order. Virtually no product or pizza boxes on floor. Very good off-floor storage. No signs of ant activity, or any other insect activity noted. Not an issue.
