Observation: Rat issue evident in premises; serveral rat droppings observed on floor in production area and on top of lids and containers for storing dry ingredients (on rack storing dry ingredients).
Corrective Action(s): Pest control is already in place (Orkin); currently conducting 2 visits per month (or more as rats are caught).
Clean and sanitize all items/surfaces contaminated by droppings. Discard any open ingredients not stored in containers with tight-fitting, pest proof lids.

Observation: Food debris accumulation observed in several areas of production area:
- Floors in general
- Rack for storing dry ingredients
- Dry ingredient containers and lids
- Behind and underneath cooking equipment
Corrective Action(s): Clean and sanitize the areas noted above, and do so daily after production ends.

Comments

- Hand sink in production area and in front area equipped with hot water, liquid soap, and paper towels
- Bleach sanitizer solution available in spray bottle at >100ppm; mix 1 tsp bleach with 1 Litre water for proper concentrations
- Retail area clean and organized
- Walk-in cooler measured to be 4C
- Chest freezer measured to be less than -18C
- Storage of dry ingredient supply upstairs was organized, kept off the floor and away from walls
- Pest control reports available for review; last visit conducted on January 17, 2017; 6 rats removed from traps
