Observation (CORRECTED DURING INSPECTION): 1) Ice-bin near the drive-thru counter was not in sanitary condition. Operator informed that the ice-bin is not being used.
Correction: Do not store ice in the ice bin if it is not in use. Thoroughly clean the bin before use.
2) One sanitizer bucket behind the reach-in freezer was containing 50ppm QUATS.
Correction: Refill the sanitizer bucket to ensure 200ppm QUATS solution. Operator re-filled the bucket.
Rationale: Inadequate sanitizer limits proper sanitation of food contact surfaces which can cross-contaminate the food and cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Food not protected from contamination.
Observation: Missing ceiling tile in dry storage over unpackaged disposable serving cutlery (boxes).
correction: Keep all food serving utensils and cutlery in packaged or closed boxes to prevent cross contamination. Operator packaged the boxes in plastic bag.
Rationale: Dust and debris can fall in the containers that are directly used to serve food in for take out.

Walk-in cooler was holding food at 3C (tomatoes were probed to obtain internal temperature).

Note: Operator informed that they had received delivery not long before the inspection which warmed up the walk-in freezer.

Sanitation
Ice machine was in good sanitary condition. Scoop was stored outside.
Ventilation canopy was clean and is due for servicing this month.
3-compartment sink was equipped with plugs.
Dispenser dispensed 200ppm QUATS solution.
No signs of pests were noted at time of inspection.
Abell Pest control company monitors the premise monthly.
UV lamp for flies is present on premise in clean condition.

Administration
Operator is Serve Safe Certified valid until June, 2024.
Temperature and cleaning logs are up to date (online).

Facility is take-out only. Employees wearing masks and sanitizers are available. Temperatures are being monitored for all staff.
