Observation (CORRECTED DURING INSPECTION): Gulab jamun fridge running at 18C - all products inside also 17-18C
Corrective Action(s): Approximately 8 half - full trays of various gulab jamun discarded at time of inspection.
EHO destroyed product.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Equipment does not appear to be getting sanitized after washing. A bottle of bleach was on site, however staff unable how to answer how dishes are getting sanitized with only 1 sink that can accommodate the equipment.
Corrective Action(s): ALL food contact surfaces must be washed, rinsed, then sanitized using 100ppm chlorine (bleach) solution. This means for every 1 gallon of water, 1Tbsp of bleach must be used. After the equipment / utensils/ bowls have been sanitized, they must be air dried.

Observation: Renovation has occurred without health approval. Walk in cooler has been moved and enlarged, while sink has been changed to a single compartment warewashing sink with an adjacent hand wash sink
Corrective Action(s): 1. You must submit floor plans to your EHO as discussed
2. Floor plans will be a proposal including adequate sink requirements. This means 3 compartments plus hand sink. The 3 compartment sinks must be large enough to fit your biggest piece of moveable equipment. You can add drying racks above the sinks

Observation: Gulab jamun display cooler not working at time of inspection - products 18C
Corrective Action(s): Do not use a broken cooler! Gulab jamun are not shelf stable and risk making people sick if kept at this temperature.
Repair. Monitor daily.

Comments

Despite an excellent renovation with large walk in cooler, and smooth, easy to clean surfaces, some big changes need to occur
As per above violation, sinks must at a minimum be 3 compartments (1 for washing, 1 for rinsing, 1 for sanitizer soak), have a drainboard or drying rack, PLUS a designated hand washing station. The hand wash station must have a liquid soap dispenser and a paper towel dispenser.
Bleach sanitizer at 100ppm on site in the form of a rag bucket, however dishes don't appear to be getting sanitized after use
**THIS CANNOT WAIT until new sinks are installed. All food contact surfaces MUST be washed, rinsed, and sanitized

With recent renovation and reorganization, sanitation of facility has greatly improved
No evidence of pests, however please keep your back screen shut as much as possible
Samosa filling at time of inspection measured 10C which implied correct cold storage prior to use. Be sure to minimize the amount of time this product spends outside of the fridge.
