Comments

Routine inspection conducted as the facility is re-opening after being closed for almost 2 years due to COVID-19 pandemic. No food preparation/cooking was being conducted at the time of inspection.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Beverage cooler at 3C
- Domestic cooler at 1C
- Domestic freezer at -17C
- Stand up freezers (x2) at -14C
- Chest freezers (x2) in storage room at -19C and -27C
- Temperature logs were maintained.

Note: Seal of one of the chest freezer has started to wear out from a corner. Consider replacing it with a new one if the freezer is unable to seal properly and/or hold a temperature of -18C or less.

Storage:
- General sanitation of the facility was satisfactory.
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- 2 compartment sink used for handwashing and warewashing purposes and was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Operator demonstrated proper steps for manual dishwashing and prepared 100ppm bleach solution sanitizer in 2nd sink. Drain plugs on site.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Utensils and equipment were found in sanitary condition.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operator has valid FoodSafe Level 1 equivalent (Probe It Food Safety Certificate, Exp 2027)
