Observation (CORRECTED DURING INSPECTION): Observation: Ice scooper at bar area kept within ice machine.
Correction: Ice scooper must be kept outside ice machine to prevent contamination of ice.

Observation: 1) Observation: Mouse droppings (old) noted in cupboard under coffee maker in bar area.

Correction: Remove droppings. Clean and sanitize noted areas with a dilute bleach solution (100 ppm chlorine).
Ensure frequent monitoring of pest activity.
2) Observation: Build-up of debris and grease noted under equipment and storage shelves in kitchen area, under shelves in alcohol storage area, and under cupboards in bar area. Dust build-up noted on fans in walk-in cooler.

-Hot holding soups (60 deg. C)
-Sanitizer adequate at 200 ppm Quats.
-Dishwasher sanitizer adequate at 100 ppm chlorine, glass washer (12.5 ppm iodine)
-Handsinks equipped with hot/cold running water, soap, and paper towels.
-Operator has Food Safe Level 1 certificate.
-Permit posted in a prominent location.

-Ensure to maintain temperature logs for cooler/freezer units daily.
-Ensure to keep a copy of pest control invoice on-site.
