Observation (CORRECTED DURING INSPECTION): Internal temperature measured for small amount of pork feet (45C) and bisket (55C) in the noodle station. Manager cited that the foods were in temperature danger zone for 1 hour. Foods reheated to 74C for 15 seconds at this time.

Observation (CORRECTED DURING INSPECTION): 1. The dual mode (high temp/chemical) dishwasher's sanitizing cycle was measured at 67C and 0 ppm chlorine at the plate level. The dishwasher now dispense 100 ppm chlorine. All food contact surfaces which went through the dishwasher today must be washed and sanitized again. Staffs initiated the cleaning steps at this time.
2. Some of sanitizer pails were measured with 0 ppm chlorine residual. Sanitizer pails were replenished with 100 ppm chlorine at this time.

Observation (CORRECTED DURING INSPECTION): Large pots stored in front of a hand washing sink next to BBQ meat station. Obstruction removed at this time.

Observation (CORRECTED DURING INSPECTION): 1. Observed ducks drying in the walk in cooler without any covers. Coverage provided at this time.
2. Observed a container of dry ingredient in the dry storage without any covers. Coverage provided at this time.
3. Observed a stainless steel bowl used as a dry ingredient scoop.
Corrective Action(s): 3. Replace any bowl type scoops with a food grade material scoop with a handle. Correct this by: 1 week.

Observation: Small amount of flies noted in the main kitchen (each department). Reviewed pest control report (dated May 3, 2023) reviewed. Pest control technician addressed sanitation issue.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
All coolers measured at 4C or less.
All freezers at adequate temperature.
Food contact surface sanitizer measured at 100 ppm chlorine.
Glass washer's sanitizing cycle was measured at 12.5 ppm iodine.
Routine pest control service in place.
Hot holding measured at 60C or higher (see an exception in the violation section).
Adequate thawing procedure observed at this time.
Improvement noted around the fish tank regarding standing water.
Observed only small amount of foods stored in the ambient temperature for a lunch rush.

Note:
The dishwasher is serviced biweekly by a professional company. Due to the frequent violation related to the dishwasher, the facility is to record the temperature and/or sanitizer concentration of the dishwasher twice/day, effective immediately. The log will be reviewed in subsequent inspections.
