- Coolers operating at acceptable temperatures (4C or colder) and freezers maintaining product in a frozen state:
- Domestic fridge/freezer (back) 3C/-21C
- Prep cooler 3C
- 2 door undercounter cooler 1C
- Sushi display cooler 2C
- Domestic fridge/freezer (front) 3C/-12C
- Hot holding of cooked rice in rice cooker was 67C
- pH of sushi rice measured 4 with pH test strips.
- High temperature dishwasher operational. Final rinse measured 72.9C at dish surface
- Wiping cloths stored in bleach sanitizer solution. Concentration measured 200ppm chlorine.
- Pest control contract in place with monthly service. Reviewed most recent service report (24-Jan-2020). Report states 1 mouse caught and no holes noted.
- Operator present and has valid Foodsafe level 1 certification (valid until July 2023)
