Follow up inspection:
-Hot-held food including chicken roasts were at or above 60 degrees C.
-Staff member mentioned that they reheated the chicken roasts separately in the microwave prior to placing them into the pre-heated hot-holding unit.
-Under-the-counter cooler was at 3.4 degrees C and it was equipped with a thermometer.
-200 ppm QUATS sanitizer was available in the spray bottle.
-Temperature records of refrigeration units were being maintained.
