Observation (CORRECTED DURING INSPECTION): Utensils and scoops were stored in room-temperature water in bewteen uses.
Corrective Action(s): Discontinue this practice. Store all utensils in ice water and ensure to wash and sanitize the utensils and containers every 2 hours at a minimum.

Observation: - Tray of dumplings were stored beside hand sink, directly under paper towel dispenser.
- Bags of dry ingredients and boxes of avocados were stored in the hallway leading to customer washrooms without being in proper containers to prevent from contamination.
- Scoops were being stored directly in dry ingredients.
Corrective Action(s): - Do not store food under paper towel dispenser, as hands reaching for paper towels can potentially contaminate the food.
- All items stored in the hallway must be stored in bins/containers with lids to protect from contamination.
- Do not store scoops directly in food, as handles can contaminate the food. Wash and sanitize scoops after each use, store in clean containers, and only use as needed.

Observation: Small amount of mouse droppings were found on wooden pallet in the hallway leading to customer washrooms where unopened dry ingredients and avocados are stored.
Corrective Action(s): - Clean this area and sanitize with bleach solution. Ensure to monitor for presence of droppings on a daily basis.
- Call a professional pest control company for services, and keep a copy of the invoice on-site for review by helath inspector.
- All food items in this area must be stored in pest-proof containers with tightly fitting lids.

Note: Delivery of fresh/raw chicken was being portioned at room temperature at time of inspection. Ensure this process does not exceed 2 hours. Temperature of chicken was below 4C at time of inspection.

- Hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution was available in several spray bottles at above 100 ppm
- Dishwasher rinse cycle registered 50 ppm at the plate surface
- All coolers were at or below 4C
- Freezer temperatures were at or below -18C
- Hot held food items were above 60C
**Ensure each cooler is equipped with a thermometer. Ensure to keep daily temperature logs.
