Observation (CORRECTED DURING INSPECTION): Seafood observed not properly cold held at 7 to 9c (Internal temperature). These PHF's were discarded at time of inspection.
Corrective Action(s): Ensure all cold holding equipment temperstures are monitored and documented daily

Observation (CORRECTED DURING INSPECTION): Meat slicer observed to have not been properly cleaned as food debris observed affixed.
Corrective Action(s): Flashlight is available. Ensure staff have been trained on how to properly clean and and sanitize the meat slicer.

Observation (CORRECTED DURING INSPECTION): Soap container observed empty at dishwasher resulting in no soap being dispensed into the wash cycle. New container of soap was installed at time of inspection and dishwasher primed so that soap was being dispensed into the wash cycle.
Corrective Action(s): Rewash all utensils that went through the dishwasher today.

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser observed to be empty at back hand sink. This was refilled at time of inspection.
Paper towels missing at front hand sink. Upright dispenser was relocated to hand sink at time of inspection.
Corrective Action(s): Ensure hand wash stations are properly stocked.

Quat sanitizer bottles available but spray fiunction not working properly. The bottles were replaced at time of inspection with new spray bottles and labelled.
Door seal observed damaged on "True Refrigerator"
One light in exhaust canopy observed to be not working.
Cooler used to store seafood not cold holding properly at 7 to 9c. All PHF's removed
Corrective Action(s): Place paper towels into an upright dispenser at bar hand sink
Replace damaged door seal.
Replace burned out light in exhaust canopy
Do not use this cooler until it has been repaired to verify it is cold holding at <4c

***Monitoring logs are not being maintained for all the equipment. Update the monitoring log sheet so that all the equipment is on one page.
****Many food items stored inside the walk in cooler observed to not be properly covered or dated. Ensure food items are lidded and dated.
Bar glasswasher at 123F and approx. 70ppm chlorine. Soap dispensed into wash tank.
Main dishwasher final rinse at 73c (At plate Level).
Main walk in cooler at -2c
Walk in freezers at <-18c
No pest problems observed
