Corrective Action(s): Clean the area and sanitize with bleach solution. Monitor the area for mice activity. If problem persist hire a pest control company. Ensure to use PPE for cleaning and sanitizing the area.

Observation (CORRECTED DURING INSPECTION): Bleach water spray was not labeled. Operator did label the spray bottles at the time of inspection.

Observation: Foods inside a food insert were stored inside a secondary food insert
Correction: Do not store foods in inserts in another insert on the line coolers. Double inserts do not allow proper cold air flow into foods. Foods are 6-7C in inserts and 2C underneath.

Routine inspection

Improvements noted from previous inspection
- Ceiling tiles have been replaced with new tiles.
- Lighting in the kitchen has been improved and observed to be adequate.
- New paper towel holders installed.
- Unneeded items have been removed.
- Kitchen wall by the fryer finished with impervious material.

General comments:
- Hand washing stations were supplied with hot/cold running water,liquid soap and paper towels in dispenser or paper holders.
- All coolers measured at or below 4C(40F). All freezers measured at or below -18C. Hot holding units for rice measured at or above 60C.
- Walk-in cooler measured at or below 4C. Food separation observed. Raw stored below cooked and ready to eat food.
- Sushi rice PH measured below 4.2
- Bleach water solution available 200 ppm. recommended to have 2 spray one in the kitchen and one in front. Recommended to store wiping cloths in bleach solution or replace frequently.
- Dish washer registered at 77C.
- Food stored above the ground in dry storage.
- Ice machine observed to be clean and ice scoop stored properly in separate container.

Important reminders:
Floor is to be cleaned and maintained. Underneath equipment is to be kept clean and free of food debris. Develop a cleaning schedule so that staff can easily follow.
